Salmon Patties:

  • 1 pound skinless salmon fillet, finely chopped or pulsed in a food processor
  • 1 cup fresh spinach, finely chopped
  • 1/3 cup crumbled feta cheese
  • 1/4 cup breadcrumbs (or almond flour for low carb)
  • 1 egg
  • 2 tablespoons red onion, finely minced
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil for cooking

Instructions

  1. Mix Ingredients: In a large bowl, combine the chopped salmon, spinach, feta, breadcrumbs, egg, red onion, garlic, lemon juice, Dijon mustard, salt, and pepper. Mix until evenly combined.
  2. Form Patties: Form the mixture into 4 equal patties and place them on a plate. Refrigerate for 15–20 minutes to help them firm up.
  3. Cook Patties: Heat a drizzle of olive oil in a skillet over medium heat. Cook the salmon burgers for 4–5 minutes per side, or until golden brown and cooked through.
  4. Serve: Serve warm on buns, in lettuce wraps, or over salad with your favorite sauce or yogurt dill dressing.

Notes

  • Use canned salmon (drained and flaked) if fresh isn’t available—about two 6-ounce cans.
  • These burgers can also be baked at 400°F for 12–15 minutes, flipping halfway.
