Description

Cake:

  • 1 box white or vanilla cake mix (plus ingredients listed on the box)

Cloud Filling:

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1½ cups cold milk
  • 1 cup heavy whipping cream
  • ½ teaspoon vanilla extract
  • 2 tablespoons powdered sugar

Additional:

  • 2 cups fresh strawberries, hulled and sliced
  • Extra strawberries or mint for garnish

Instructions

  1. Prepare Cake: Preheat oven and make cake batter as per package instructions. Bake in two 8- or 9-inch round cake pans. Let cakes cool.
  2. Make Cloud Filling: Whisk pudding mix and milk until thickened. Whip cream with sugar and vanilla until stiff peaks form. Fold whipped cream into the pudding.
  3. Assemble Cake: Place one cake layer on a plate. Spread half of the cloud filling, add sliced strawberries. Top with second cake layer and remaining filling. Garnish with strawberries and mint. Chill before serving.
