For the pie:

- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 (3 oz) box strawberry gelatin
- 1/2 teaspoon lemon juice (optional)
- 4 cups fresh strawberries (hulled and halved)

Instructions
- Prepare the gelatin mixture: In a medium saucepan, whisk together sugar and cornstarch. Add water and cook over medium heat until thickened and boiling.
- Add gelatin: Remove from heat, stir in strawberry gelatin and lemon juice, if using, until dissolved. Cool for 10–15 minutes.
- Assemble the pie: Arrange halved strawberries in the pie crust. Pour cooled gelatin mixture over berries. Refrigerate for at least 4 hours.
- Serve: Serve chilled with whipped cream if desired.

- Use ripe but firm strawberries for best results.
