  • 4 cups fresh strawberries (hulled and halved)

Instructions

  1. Prepare the gelatin mixture: In a medium saucepan, whisk together sugar and cornstarch. Add water and cook over medium heat until thickened and boiling.
  2. Add gelatin: Remove from heat, stir in strawberry gelatin and lemon juice, if using, until dissolved. Cool for 10–15 minutes.
  3. Assemble the pie: Arrange halved strawberries in the pie crust. Pour cooled gelatin mixture over berries. Refrigerate for at least 4 hours.
  4. Serve: Serve chilled with whipped cream if desired.
