Cupcake Batter:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder

  • 2 large eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

  • 24 small chocolate eggs (such as Cadbury Mini Eggs)
  • frosting of choice
  • pastel sprinkles or shredded coconut for decoration

Instructions

  1. Preheat oven and prepare tin: Preheat oven to 350°F (175°C) and line a 24-cup muffin tin with cupcake liners.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. Mix wet ingredients: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Combine dry and wet ingredients: Alternate adding the dry ingredients and milk, mixing until just combined. Fold in chocolate chips.
  5. Fill cupcake liners: Fill each liner one-third full with batter, place a small chocolate egg in the center, and cover with more batter until two-thirds full.
  6. Bake: Bake for 18–20 minutes or until a toothpick inserted into the cake (not the egg) comes out clean.
  7. Cool and decorate: Cool completely before frosting and decorating with sprinkles or coconut.
