Cupcake Batter:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder

- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips

- pastel sprinkles or shredded coconut for decoration
Instructions
- Preheat oven and prepare tin: Preheat oven to 350°F (175°C) and line a 24-cup muffin tin with cupcake liners.
- Prepare dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Mix wet ingredients: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Combine dry and wet ingredients: Alternate adding the dry ingredients and milk, mixing until just combined. Fold in chocolate chips.
- Fill cupcake liners: Fill each liner one-third full with batter, place a small chocolate egg in the center, and cover with more batter until two-thirds full.
- Bake: Bake for 18–20 minutes or until a toothpick inserted into the cake (not the egg) comes out clean.
- Cool and decorate: Cool completely before frosting and decorating with sprinkles or coconut.
Notes
- Freeze the chocolate eggs for 10–15 minutes before baking to help them keep their shape.
- You can tint the shredded coconut with pastel food coloring for a festive look.
