  • 1 teaspoon baking soda

  • 2 cups old-fashioned oats
  • ½ cup raisins or dried cranberries (optional)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven: to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the egg, vanilla extract, and mashed sweet potato until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Mix the dough: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in oats, raisins or cranberries, and nuts if using.
  6. Bake: Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 10–12 minutes until edges are lightly golden.
  7. Cool: Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, slightly underbake and allow to finish setting on the baking sheet.
  • You can also add ½ cup dark chocolate chips for a sweeter twist.
