Description

Taco Lasagna is a delicious Tex-Mex inspired dish that combines the flavors of tacos with the comfort of a hearty lasagna. Layers of seasoned meat, beans, corn, and cheese sandwiched between flour tortillas create a flavorful and satisfying meal.


Ingredients

Ground Beef Mixture:

1 pound ground beef or ground turkey, 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning), 1/2 cup water

Layering:

8 large flour tortillas

Filling:

1 can (15 ounces) black beans (drained and rinsed), 1 cup corn kernels (fresh, canned, or frozen), 1 can (10 ounces) diced tomatoes with green chilies (drained)

Cheese & Toppings:

2 cups shredded Mexican blend cheese, 1/2 cup sour cream, 1/4 cup green onions (sliced), 1/4 cup fresh cilantro (chopped), optional toppings: guacamole, salsa, jalapeños


Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the meat: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat. Stir in taco seasoning and water, simmer until thickened.
  3. Prepare the filling: Add black beans, corn, and diced tomatoes to the meat mixture, stirring to combine.
  4. Layer the lasagna: Grease a 9×13-inch baking dish. Layer tortillas, meat mixture, and cheese three times, ending with tortillas and cheese on top.
  5. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
  6. Serve: Let it rest for 5 minutes before slicing. Top with sour cream, green onions, and cilantro.

Notes

  • You can swap tortillas for tortilla chips for added crunch.
  • Make it vegetarian by using plant-based ground meat or extra beans.
