Ingredients
Scale
Protein and Vegetables
- 1 pound ground beef
- ½ cup diced onion
- 1 (10 ounce) can diced tomatoes and green chilies (such as RO*TEL®)
Starches
- 6 ounces spaghetti (or other pasta)
Soups and Seasonings
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 ounce taco seasoning
- â…” cup water
Cheeses
- 1 (8 ounce) package processed cheese (such as Velveeta®), cubed
- 1 cup shredded sharp Cheddar cheese
Instructions
- Cook Pasta: Cook spaghetti according to package directions until al dente. This typically involves boiling pasta in salted water until it is tender but still firm to the bite.
- Brown Beef and Make Sauce: While the pasta cooks, heat a skillet over medium-high heat and brown the ground beef along with the diced onions until the beef is no longer pink and the onions are soft. Then stir in the condensed cream of mushroom soup, diced tomatoes and green chilies, water, and taco seasoning. Cook this mixture until it is well combined and heated through. Add the cubed processed cheese (Velveeta) and stir continuously until the cheese melts completely into the sauce.
- Combine and Serve: Drain the cooked pasta and add it directly to the skillet containing the beef and cheese sauce. Toss everything together so the pasta is evenly coated with the sauce. Top with shredded sharp Cheddar cheese, cover the skillet, and let it stand off the heat for a few minutes until the Cheddar cheese melts and becomes gooey. Serve warm.
Notes
- For a spicier dish, use diced tomatoes with hot green chilies or add extra taco seasoning.
- Velveeta cheese adds a creamy texture, but you can substitute with other processed cheese if preferred.
- Make sure to cook pasta al dente to avoid mushy texture in the final dish.
- Covering the dish before serving helps the Cheddar cheese melt evenly without overcooking the pasta.
- Leftovers can be refrigerated and reheated gently on the stovetop or microwave.
