Truffle Mixture:

- 1 1/2 cups crushed ladyfingers or vanilla wafers
- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (melted)
Coating:
- 1/2 cup cocoa powder
- Optional: melted dark or white chocolate for drizzling
Instructions
- Prepare the Truffle Mixture: In a large mixing bowl, combine mascarpone cheese, crushed ladyfingers, powdered sugar, espresso mixture, vanilla extract, and salt. Mix until smooth. Stir in melted white chocolate until dough forms. Chill for 1–2 hours.
- Shape the Truffles: Scoop out tablespoon-sized portions and roll into balls. Roll each truffle in cocoa powder. Chill for 15 minutes.
- Optional: Drizzle truffles with melted dark or white chocolate.
