Instructions

  1. Cook the meat: In a skillet over medium heat, cook the breakfast sausage or bacon until fully cooked and browned. Remove from the pan and set aside, leaving the drippings to cook the hash browns.
  2. Prepare the hash browns: In the same pan with the remaining fat, cook the diced hash browns or potatoes until golden and crispy. Remove and set aside.
  3. Scramble the eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper. Heat butter or oil in a nonstick pan over medium-low heat, then add the egg mixture. Cook gently, stirring occasionally, until the eggs are soft and fluffy but fully cooked.
  4. Warm the tortillas: Slightly warm the flour tortillas in a dry skillet or microwave to make them pliable and easier to roll.
  5. Assemble the burritos: On each tortilla, layer scrambled eggs, cooked sausage or bacon, cheddar and Monterey Jack cheeses, crispy hash browns, diced bell peppers, chopped red onion, avocado pieces, and cilantro if using. Add salsa or hot sauce according to your taste.
  6. Roll them up: Fold in the sides of the tortilla and roll tightly from one end to the other to enclose the fillings.
