Mochi Dough

- Prepare mochi batter: In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and a pinch of salt until well combined. Gradually add the strained watermelon juice while stirring continuously to form a smooth batter. Next, stir in the vegetable oil thoroughly.
- Cook the mochi dough: Cover the bowl loosely with plastic wrap and microwave on high for 1 minute. Remove and stir the mixture to ensure even cooking. Microwave again for 1 to 2 minutes longer, stirring once more until the mixture thickens, becomes sticky, and slightly translucent, indicating the mochi dough is ready.
- Shape the mochi: Lightly dust a clean working surface with cornstarch and transfer the hot mochi dough onto it. Allow it to cool slightly until manageable. Dust your hands with cornstarch, divide the dough into small portions, and flatten each into a circle.
- Fill and seal: Place about 1 teaspoon of sweet red bean paste or chilled watermelon puree in the center of each dough circle. Carefully pinch the edges together to fully enclose the filling and form a smooth ball.
- Final touches and serving: Dust off any excess cornstarch from the mochi balls. They can be served immediately for a soft texture or chilled slightly if preferred. Store any leftovers in an airtight container to maintain freshness.
