Instructions
- Prepare Watermelon Cubes: If using a whole seedless watermelon, cut it into quarters. Score the flesh with 1-inch parallel cuts in both directions to create cubes, then slice between the rind and flesh to remove the cubes.
- Freeze Watermelon Cubes: Place the watermelon cubes in a single layer on a baking sheet lined with parchment paper or a silicone mat. Freeze them until solid, which will take at least 3 hours or overnight for best results.
- Combine Ingredients: In a blender, add 2 ½ cups of frozen watermelon cubes, frozen strawberries, canned light coconut milk, plain whole milk or Greek yogurt, honey, and lime juice if you choose to use it.
- Blend Smooth: Blend all the ingredients until the mixture is smooth and creamy, roughly about 1 minute. Stop occasionally to stir and ensure even blending.
