  • 8 oz feta cheese (crumbled)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 small garlic clove (minced)
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 small roasted beet (peeled and finely diced)
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons chopped roasted pistachios
  • extra olive oil and dill for garnish

Instructions

  1. Prepare the Whipped Feta: In a food processor or blender, combine feta, Greek yogurt, olive oil, garlic, and black pepper. Blend until smooth and creamy, scraping down the sides as needed.
  2. Assemble: Spread the whipped feta onto a serving plate or shallow bowl. Top evenly with diced roasted beet, chopped dill, and crushed pistachios.
  3. Garnish and Serve: Drizzle with a bit of olive oil and garnish with extra dill if desired. Serve with toasted pita, crackers, or fresh vegetables.

  • To roast beets, wrap in foil and bake at 400°F (200°C) for 45–60 minutes until tender, then peel once cool.
