Description
Summer Berry Bliss Icebox Delight is a refreshing no-bake dessert featuring layers of graham crackers, creamy vanilla pudding with cream cheese, whipped cream, and fresh summer berries. Finished with a drizzle of melted white chocolate, this easy-to-make dish is perfect for warm weather gatherings and requires chilling time to soften the graham crackers and meld the flavors.
Ingredients
Scale
Graham Cracker Layer
- 19 oz graham crackers
Pudding Mixture
- 8 oz cream cheese, softened
- 2 (3.4 oz) packages vanilla instant pudding mix
- 2 1/2 cups cold milk
Whipped Cream Layer
- 12 oz Cool Whip or homemade whipped cream
Fruit Layers
- 3 cups fresh strawberries, sliced
- 1 1/2 cups fresh blueberries
Topping
- 2 oz white chocolate chips
Instructions
- Beat cream cheese and dry pudding mixes: In a large bowl, use a mixer to blend together the softened cream cheese and the dry vanilla instant pudding mixes until smooth and well combined.
- Gradually beat in milk: Slowly add the cold milk to the cream cheese and pudding mixture, continuing to beat until the mixture is smooth and fully incorporated.
- Stir in Cool Whip: Gently fold in the Cool Whip or homemade whipped cream, reserving about ½ cup for the topping, to create a light and fluffy pudding mixture.
- Layer the dessert: Spread a thin layer of Cool Whip on the bottom of a 9×13-inch pan. Alternate layers of graham crackers, pudding mixture, and fresh berries (strawberries and blueberries), repeating the layers until the pan is filled and the ingredients are used up.
- Refrigerate: Cover and chill the dessert in the refrigerator for at least 4 hours or overnight. This allows the graham crackers to soften and the flavors to meld together.
- Drizzle with white chocolate: Before serving, melt the white chocolate chips gently (using a double boiler or microwave in short bursts), then drizzle the melted chocolate evenly over the top of the dessert to add a sweet finishing touch.
Notes
- For best results, chill the dessert overnight to allow graham crackers to fully soften.
- You can substitute Cool Whip with freshly whipped cream for a more natural option.
- Use fresh, ripe berries to enhance the flavor and texture of the dessert.
- White chocolate can be replaced with dark or milk chocolate chips based on personal preference.
- This dessert should be kept refrigerated and served chilled.
