Description

Summer Berry Bliss Icebox Delight is a refreshing no-bake dessert featuring layers of graham crackers, creamy vanilla pudding with cream cheese, whipped cream, and fresh summer berries. Finished with a drizzle of melted white chocolate, this easy-to-make dish is perfect for warm weather gatherings and requires chilling time to soften the graham crackers and meld the flavors.

Ingredients

Scale

Graham Cracker Layer

  • 19 oz graham crackers

Pudding Mixture

  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages vanilla instant pudding mix
  • 2 1/2 cups cold milk

Whipped Cream Layer

  • 12 oz Cool Whip or homemade whipped cream

Fruit Layers

  • 3 cups fresh strawberries, sliced
  • 1 1/2 cups fresh blueberries

Topping

  • 2 oz white chocolate chips

Instructions

  1. Beat cream cheese and dry pudding mixes: In a large bowl, use a mixer to blend together the softened cream cheese and the dry vanilla instant pudding mixes until smooth and well combined.
  2. Gradually beat in milk: Slowly add the cold milk to the cream cheese and pudding mixture, continuing to beat until the mixture is smooth and fully incorporated.
  3. Stir in Cool Whip: Gently fold in the Cool Whip or homemade whipped cream, reserving about ½ cup for the topping, to create a light and fluffy pudding mixture.
  4. Layer the dessert: Spread a thin layer of Cool Whip on the bottom of a 9×13-inch pan. Alternate layers of graham crackers, pudding mixture, and fresh berries (strawberries and blueberries), repeating the layers until the pan is filled and the ingredients are used up.
  5. Refrigerate: Cover and chill the dessert in the refrigerator for at least 4 hours or overnight. This allows the graham crackers to soften and the flavors to meld together.
  6. Drizzle with white chocolate: Before serving, melt the white chocolate chips gently (using a double boiler or microwave in short bursts), then drizzle the melted chocolate evenly over the top of the dessert to add a sweet finishing touch.

Notes

  • For best results, chill the dessert overnight to allow graham crackers to fully soften.
  • You can substitute Cool Whip with freshly whipped cream for a more natural option.
  • Use fresh, ripe berries to enhance the flavor and texture of the dessert.
  • White chocolate can be replaced with dark or milk chocolate chips based on personal preference.
  • This dessert should be kept refrigerated and served chilled.
